What & Why
Whilst gallivanting around bars in the big smoke, the widely accepted best place in the world for mixed drinks, so they say. Our boss, mildly obsessed with Manhattans, also a great lover of Bananas (and all Banana flavoured things), came across a Banana Manhattan. He was in jubilation at this…how could this not be the greatest thing in the world….turns out 2oz of Rye and 1oz of Banana liquour….isn’t the greatest thing in the world, at all. So after plaguing him for the past 5 years finally developed a way to make a damn fine Bananhattan.
With all Manhattans it’s usually best to start with a Rye Whiskey, however since we are trying to fix something that is in no way broken we will be reaching for Buffalo Trace Bourbon but a Banana Buffalo Trace Bourbon (We’ll get to that later), that is renowned for being an incredibly well balanced Bourbon. With this as our base we have also substituted the regular Vermouth for blend of Vermouth & Ruby Port that has the influence of the Vermouth but also delivers a much bolder velvety deeper flavour (This ultimately ended up being the key to binding the flavours together in the end…after many many many manym anym many manymanyamnym MANY failed attempts). Whilst Angostura is the go to bitters for the Manhattan, we have opted for Coffee Bitters, it was original Toffee Bitters that ended up being a little too rich in the end), the coffee bitters add another level of depth with out complicating the drink too much.
The way we ended up getting the predominant Banana flavour into the drink was essentially by running Buffalo Trace through the Rota-Vap with fresh over ripe Banana to develop a Banana Moonshine as such. the bonuses of doing it via this method is that we gained a Moonshine/distillate with the exact same base Mash bill as Buffalo Trace with heavy fresh Banana notes, that doesn’t exist in alot of the synthetic style Banana liquours. The other luxury is that there is no added sugar allowing for a dryer drink. We then blend this with the Buffalo Trace. All drinks deserve a garnish, its kinda like the leaving Hi-Five of the booze world, for this one we make Banana cherries that are simply done by melon balling a banana skewering the balls and then freezing them. Voila, there you have the Bananhattan.
